Bon appetit and salut!

The Texas grocery store chain, H-E-B, has a Mexican Hot Chocolate ice cream from their store brand line. It is fantastic.

    One liqor store here has a lot of different kriek and geuze beers. It’s  a bit further away but I will go there to try some of the bottles. They’re not the cheapest beers though. The Drie Fonteinen kriek is 9 euros for a 37.5 cl bottle.

    @njerry there are some very nice wines made in the finger lakes if you are interested.

    We enjoyed some of the wineries along Seneca Lake near Watkins Glen; but I feel they pale in comparison to what the Niagara-on-the-Lake region has to offer.

    On the other hand, I’m a huge fan of Ommegang Brewery near Cooperstown.

    I’m on the OMAD diet (One meal a day), and while it is working as intended it really is fucky sometimes. I can deal with the hunger (to be fair, I am kind of usiung cheat codes in this regard), what bothers me is the excessive burping and bursts of hick-ups that have become a staple of my mornings and noons.

    I got a bit lax and I think I gained a little bit of weight the last few months but not too much.

    Yeah I’ve been getting super trim but started eating Pizza again in the lockdown.

    For a while I was picking up 4-packs of local craft beers from my favorite watering hole in Manhattan, Haymaker; but since the stay-at-home orders in mid-March the bar has been shuttered. As of today I’m down to two 16-oz cans; I may have to resort to drinking Brooklyn Lager to stay alive.  :wacko:

    For a while I was picking up 4-packs of local craft beers from my favorite watering hole in Manhattan, Haymaker; but since the stay-at-home orders in mid-March the bar has been shuttered. As of today I’m down to two 16-oz cans; I may have to resort to drinking Brooklyn Lager to stay alive.  :wacko:

    I like craft beer and the more expensive stuff, but you’ve got to have a few supermarket cheapies you can drink. The Albert Heijn actually makes a very good IPA for their supermarket brand that is just 1 euro a bottle, the cheapest IPA by far and certainly not the worst.

    I may have been a wee bit melodramatic in my previous post. There is actually a very good liquor store in walking distance of my house that has a wonderful rotating selection of craft beers. I just like to complain, and I’m really good at it.

    I’m going to stick with the wines I know I like. I like trying new stuff but with wine it’s often a disappointment, somehow most wine just doesn’t appeal to me. I pooured a bunch of yucky wine down the sink lately so I’m staying with my favorites now.

    Try a rijsttafel when you are with a couple of people. It’s a traditional Dutch-Indonesian meal with a whole lot of little dishes.

    Yesterday I had a Paulaner hefeweiss, this was an excellent weissbier. I think I like it even more than Weihenstephaner. My favorite is Schneider Weisse which is just heavenly.

    Today I had my first real, proper cappuccino since the weekend before St.Patrick’s Day. (SO good). Well, they claimed it was a cappuccino but I suspect it was rocket fuel because, for a brief moment in time, I knew all the secrets of the universe. I also had Guinness chocolate cake. In the middle of that the storm from last night continued storming and half a tree landed almost on top of me so that was fun. (I may be exaggerating for effect, it was probably more like a quarter of a tree). The squirrels were most displeased. Trust me, you do not want to be in the vicinity of squirrels when they start lobbing debris at each other.

    I now have whiskey.

    Loads of local businesses are offer direct to door delivery during the lockdown. Took advantage of this to stock up and help support businesses (but mainly to stock up on booze).

    The Six Degrees North specialise in Belgian style beers. The Burnside Brewery were offering a beer and pies delivery. It was a no brainer as we’ve had these pies before (we’ve bought these Wark Farm pies before at various farmer markets and they never last the journey home – always scoffed as soon as they’re bought!).

    I just had the most amazing burger

     

    It had parmesan crusted mushroom, smoked bacon salt onion rings,  miso musard and umami ketchup.

    Also beef, bacon and cheese but those are LESS IMPORTANT then the ingredients above.

    I have a romantic evening planned for Friday (YES Anders, Stumpy the tree stump and I have broken up!) and I am making Duck Tacos with a Cherry and Blood Orange salsa.

    Holy fuck are these fancy pants recipes intensive.  I spent tonight pickling red onions and then shearing the shit out of a poor dead duck, and that’s not even 0.1 of step 1.  Consequently, I now know that ducks are funny little plumpy things full of wibbly wobbly bits.

    It’s a good idea but it’s got enough sugar in it.

    There’s the cherries, cointreau, the blood orange segments and juice, sugar and lime in the pickled red onions, and sugar in the habenero sauce.

    In fact, I’m wondering if the duck fat, coriander, white pepper, fried shallots and chilli in the habenero sauces will be enough to balance it.

    We’ll see.  I’m sticking to the recipe (excepting I’m not bothering to make the corn tortillas and am buying them instead)

    I couldn’t decide whether to get red or white. I am now conducting an experiment to determine which is nicer – the Merlot or Pinot Grigio. So far it’s neck and neck. However, the Merlot does have a puppy on the label.

    Bernadette might be right and thanks, njerry!

    I took inspiration from Tim regarding the pickled red onions, made some siracha mayo (siracha + mayo + garlic), and the rest of the toppings were cosmopolitan lettuce, tomato, roasted onions and the best decision of them all: Blue cheese (Danablu).

    I should’ve gone a bit easier on the siracha, but it was still the best burgers I’ve made (or had) in a loooong while. First of the home-made variety that I’ve had without Sweet Baby Rays bbq sauce in over a year. Except when I do plain burgers, but those hardly count. Few and far between.

    Everything worked well but the duck could have been fresher seeing I bought it and carved it on Wednesday.

    The pickled onions were the real winner and the salsa. The onions and fresh coriander is a nice pair, and oddly the aragula works well as more than just a  garnish for the duck. The salsa was not nearly as powerful as I was expecting which mean the habanero sauce could dominate if you used too much.

    There’s a lot of duck fat in this. The tortillas are cooked in it, irs in the salsa and the duck is marinated in it, but 8t never overpowers.

    I wore a pink linen shirt and blue jeans.  Evening was nice. I made cherry old fashioneds too.  We didn’t once argue about the Snyder cut or the DNC so I mean, how nice an evening could it have been really…

    Unfortunately there is washing up to do today which ive decided is Anders’ fault.

    Cuddles for B.

    Salsa is residual duck fat left in pan, table spoon of diced shallots, quarter tea spoon of crushed white peppercorns, bay leaf, 125 mls blood orange juice, 60 mls cointreau, 180g cherries pitted and slice and 2 blood oranges segmented.

    Put juice, cherries and shallots in a pan medium heat for 3 mins. Add cointreau, peppercorn, bay leaf and heat for further 3. Pour into bowl and toss with orange segments.

    I  invented a new cocktail.

    2 fingers speyside single malt (I used glen  grant 10yo).

    2 second pour cointreau

    squeeze of grape fruit juice (real)

    one drop orange bitters

    2 drops angustura bitters

    splash of lime juice (bottle)

    say four cubes of ice

    top with a little soda water

     

    I call it the “What a surprisingly refreshing and balanced drink I made”.

    I have invented a coffee cocktail.

    Colombian coffee mixed with Sumatra Mandheling and frothy milk with hot water.

    I ran out of one so I mixed the two together. Okay it’s basically coffee with extra coffee.

    Sounds delicious. Coffee from Indonesia is probably my favorite, my coffee shop has coffee from Sumatra and Java. Sulawesi is probably the best of the islands but they don’t have that anymore.

    I’m currently drinking an Arabica bean coffee called Dancing Goat, from Batdorf & Bronson Coffee Roasters. It’s got hints of cherries and chocolate, and has just the right amount of dark roast flavor.

    And yet I still crave Starbucks. I’m such a whore.

    It’s only specific to America because other countries use different ingredients (specifically no HFCS and many have sugar tax laws that mean the content is lower) but it was surprising to me that Mountain Dew was so much worse than Sprite. I’d have guessed they’d have been about the same.

    I’m horrified.

    Poor baby sheep. And he didn’t tie his hair back; extra protein, I guess. Unless your spuds are different, the mash will be all gloopy (dry them off after draining for starters). And as for… well strewth mate. That said, I’m not convinced he’s Australian unless it’s a health and safety requirement. Is it?

    Aside from that, kinda my cooking method. And I finally know how to pronounce Warchestershoe sauce.

    It’s a very nice kitchen.
